has prepared recipes for dishes with few calories and many vitamins and minerals for you.
Delicious meat-free diet stuffed cabbage rolls
Savoy cabbage roll with quinoa on tomato slices
Ingredients for 4 servings:
- 4 medium-sized Savoy cabbage leaves
- 120 g organic quinoa or couscous
- 80 g button mushrooms or porcini mushrooms
- 40 g onion
- 80 g fresh bell pepper
- 400 g fresh tomatoes
- 4 tablespoons olive oil and seasonings
Sauté the finely chopped onion in olive oil, then add the sliced mushrooms and bell pepper and lightly fry them. Add the quinoa, season lightly, pour in a little liquid, and simmer. Wrap the filling in a blanched Savoy cabbage leaf, shape it into a cabbage roll, and cook it in salted boiling water. For a fresher taste, serve with peeled, lightly cooked tomatoes.
Pumpkin in a pumpkin – have fun with the presentation!
Pumpkin soup
Ingredients for 4 servings:
- 300 g pumpkin
- 120 g zucchini for the soup garnish
- 100 g cleaned soup vegetables, diced
- 1 tablespoon olive oil
- 1/2 onion
- 1 clove garlic
- nutmeg, salt, pepper
- chopped parsley or chives (optional)
- 0.5 dl white wine
- 1 dl Ego yogurt
In olive oil, quickly sauté slices of onion and one or two cloves of fresh garlic, then add diced pumpkin that has been hollowed out and peeled beforehand. Lightly stew it, add soup vegetables and spices, and season with salt. When the pumpkin is soft, puree it, add water and wine to reach the desired consistency, bring to a boil, and serve (if possible, in the hollowed-out pumpkin). For the soup garnish, use sautéed zucchini – cut the zucchini into cubes and quickly fry them in olive oil. The flavor of the soup is further improved with yogurt.
For fish lovers
Baked salmon with herb sauce
Ingredients for 4 servings:
- salmon fillet (700 g)
- capers
- finely chopped shallot
- a bunch of assorted herbs
- lemon juice, olive oil, salt
Wash the salmon fillet and dry it well with paper towels. If necessary, remove small bones with tweezers. Cut it into 4 roughly equal pieces and lightly season with salt and pepper.
Wash and chop the herbs, peel and finely chop the shallot, and also chop the capers (1 teaspoon). In a bowl prepare the sauce – mix lemon juice (2 tablespoons), olive oil (2 tablespoons), and salt (2 pinches). Stir until the salt is completely dissolved, then add the herbs, shallot, and capers and mix everything well.
Heat a pan over medium-high heat. Add oil to the well-heated pan, and once it is hot, place the salmon pieces in it. Without moving or turning them, cook for 2 to 3 minutes first on the skin side. Then carefully turn them and sear the other side – cook for another 3 to 4 minutes. If the pieces are very thick, briefly sear the sides as well.
Place the cooked salmon on plates and pour over the herb sauce. Suitable side dishes include roasted vegetables, wholegrain rice, grains, etc.
Refreshing low-calorie dish for Indian summer
Cucumber salad with yogurt
Ingredients for 4 servings:
- 4 cucumbers
- garlic or radishes
- 2 dl yogurt
- 10 ml lemon juice
- 1 tablespoon olive oil and two sprigs of mint or dill
Peel the cucumbers, cut them lengthwise, scoop out the seeds with a spoon, and slice them thinly. Also slice the garlic or radishes and chop the mint leaves picked from the stems.
Place the cucumbers and garlic or radishes in a bowl, season with salt and pepper, and mix well. Finally add lemon juice, olive oil, yogurt, and half of the herbs. Mix again and sprinkle with the remaining herbs.
The dish is quick to prepare. Since it tastes best when cold, place it in the refrigerator for about half an hour before serving.
Healthy quick dessert
Dessert with fruit and Greek yogurt
Ingredients:
- Greek yogurt
- berries
- nectarines, peaches or plums
- a teaspoon of honey
Blend the ingredients and freeze.
